Homemade Pockets

Oven Temp: 400°F | Bake Time: 20-25 min

  • 2 1/4 tsp Yeast
  • 1 1/3 Cups Warm Water (110°F)
  • 1 TBSP Sugar
  • 3 1/2 to 4 Cups Flour
  • 2 TBSP Olive Oil
  • 1 tsp Salt
  • Egg Wash: 1 Egg with 1 TBSP Milk

Filling Options:
  1. Ham & Shredded Cheese
  2. Pepperoni, Red Sauce, & Shredded Cheese
  3. Meatball, Red Sauce, & Shredded Cheese
  4. Ham, Egg, & Shredded Cheese
  5. And Many More

  1. In a large mixing bowl, combine Water, Sugar, and Yeast. Let rest for 5 min.
  2. Add Flour(Start with 3 1/2 Cups), Oil, and Salt; then knead dough with Hook Attachment until dough is smooth.
  3. Place into a lightly oiled bowl. Cover and let rise for an hour.
  4. Punch down Dough, turn onto lightly floured surface and cut in 8 equal parts and let rest for 10 min.
  5. Line 2 baking sheets.
  6. Roll each part into roughly a 6"x4" rectangle and place them on the baking sheets.
  7. Fill with your filling option, grab the long side and fold it over and seal seam by pinching the dough together.
  8. Brush with Egg Wash and add seasonings to tops. (I usualy use salt, pepper, and Weber garlic parm seasoning).
  9. Cut slits in the tops, for air vents.
  10. Bake in 400°F oven for 20 to 25 minutes or until edges are golden brown. Slightly cool on rack before handling and eating.
  11. You can store these in the freezer after they cool completely and microwave for 2-3 min or bake at 350 for 20 to reheat.
